Truffle Potter & Allan Scott Cecilia Brut

This pairing brings together the earthy decadence of our Truffle Potter with the crisp, vibrant bubbles of Allan Scott Cecilia Brut, creating an elegant and balanced tasting experience.

Truffle Potter: This soft cheese is infused with the deep, savoury richness of truffle, giving it an intense, earthy flavor with creamy, buttery undertones. The truffle’s aromatic complexity adds a luxurious layer to the cheese, making it a standout centrepiece on any cheese board.

Allan Scott Cecilia Brut: A traditional method sparkling wine, this brut features lively acidity and delicate citrus notes with hints of green apple and brioche. Its crisp bubbles and refreshing finish make it a perfect partner for foods that carry richness and depth.

The Pairing: The effervescence of the Cecilia Brut cuts through the creamy texture of the Truffle Potter, creating a balance between the earthy, umami notes of truffle and the bright, palate-cleansing acidity of the wine. The wine’s subtle yeastiness, reminiscent of freshly baked bread, mirrors the depth of the truffle, while its vibrant citrus and apple tones provide a refreshing contrast, elevating both the cheese and the wine in each bite.

Hardy's with Henry of Pelham Chardonnay

This pairing brings together the creamy, nutty profile of our Hardy’s cheese with the rich, subtly oaked character of Henry of Pelham Chardonnay, offering a delicious harmony of flavours.

Hardy’s: A semi-hard cheese, Hardy’s has a firm yet creamy texture, with nutty, slightly sweet undertones and a hint of sharpness. Its mature flavours develop complexity without being overpowering, making it a versatile and flavorful choice.

Henry of Pelham Chardonnay: A well-rounded wine, this Chardonnay showcases a balance of ripe stone fruit flavors like peach and pear, alongside notes of vanilla and subtle oak from barrel aging. Its creamy mouthfeel is complemented by a refreshing acidity and a touch of minerality, providing depth and elegance.

The Pairing: The creamy texture and nutty profile of Hardy’s pairs beautifully with the richness of Henry of Pelham Chardonnay. The wine’s buttery, oak-influenced characteristics enhance the cheese’s creaminess, while the Chardonnay’s crisp acidity and minerality provide a fresh counterbalance to the cheese’s richness. The stone fruit and subtle citrus notes in the wine complement the sweeter, nuttier elements of Hardy’s, creating a well-rounded, satisfying tasting experience.

Smoked Wordsworth with St. Emilion Le Jardiniere de Queyron Pindefleurs

This pairing combines the rich, smoky flavours of our Smoked Wordsworth cheese with the elegant, structured depth of a classic St. Emilion Le Jardiniere de Queyron Pindefleurs wine, offering a sophisticated and layered tasting experience.

Smoked Wordsworth: This semi-hard cheese features a smooth, creamy texture infused with an intense yet balanced smoky flavour. The smokiness complements the natural buttery, slightly nutty characteristics of the cheese, creating a bold profile with a lingering finish.

St. Emilion Le Jardiniere de Queyron Pindefleurs: A refined Bordeaux blend from St. Emilion, this wine showcases rich dark fruit flavours—like black cherry, plum, and blackberry—combined with earthy notes, a touch of spice, and well-integrated tannins. Its subtle oak aging adds layers of cedar and vanilla, with a smooth, velvety finish.

The Pairing: The robust smokiness of Smoked Wordsworth finds a perfect partner in the deep, dark fruit and earthy complexity of the St. Emilion. The wine’s structured tannins help cut through the cheese’s richness, while its fruity and earthy notes amplify the cheese’s smoky layers. The oak influence in the wine mirrors the wood-smoked character of the cheese, creating harmony between the two, while the wine’s acidity keeps the palate refreshed after each bite.

Blyton with Baglio Gibellina Frappato

This pairing marries the tangy, crumbly texture of Book and Bucket’s Blyton cheese with the bright, juicy flavors of Baglio Gibellina Frappato, offering a light, fresh, and vibrant combination.

Blyton: Blyton is a crumbly sheep’s milk cheese with a tangy, citrusy bite and a fresh, clean finish. Its texture is firm yet delicate, making it perfect for crumbling over dishes or enjoying on its own. The sharpness of the cheese is balanced by a subtle creaminess, giving it a well-rounded flavour profile.

Baglio Gibellina Frappato: Frappato is known for its light body, floral aromas, and bright red fruit flavours like cherry, raspberry, and strawberry. This Sicilian red wine has a juicy, refreshing quality, with gentle tannins and a crisp acidity that make it an easy-drinking and versatile option.

The Pairing: The lively acidity and fresh red fruit notes of Baglio Gibellina Frappato complement the tangy sharpness of Blyton cheese beautifully. The wine’s bright cherry and raspberry flavours contrast with the cheese’s earthy undertones, while its light body and smooth texture balance the cheese’s crumbly, slightly dry character. The Frappato’s floral hints also add a delicate aromatic layer that enhances the complexity of the cheese without overwhelming it.

This pairing unites the bold, creamy tang of our Cranborne Blue with the rich, sweet complexity of Quinta De Corte LBV Port, creating a classic yet indulgent combination.

Cranborne Blue: A creamy blue cheese with a strong, tangy bite, Cranborne Blue delivers an intense depth of flavour with earthy, savoury undertones. Its smooth texture and rich, salty profile make it a perfect match for sweet or fortified wines, enhancing its complex layers of blue mold while remaining velvety on the palate.

Quinta De Corte LBV Port: This Late Bottled Vintage Port offers a luxurious profile of ripe dark fruits like blackberries, plums, and figs, with hints of chocolate, spice, and a velvety sweetness. Its rich, full-bodied nature is balanced by a refined acidity and a long, warming finish, typical of a high-quality LBV port.

The Pairing: The intense tang and creaminess of Cranborne Blue are beautifully balanced by the sweet, fruit-forward richness of the Quinta De Corte LBV Port. The port’s deep, dark fruit flavors provide a sweet counterpoint to the salty sharpness of the blue cheese, while its spicy, chocolatey undertones complement the earthy characteristics of the mould.
